Ingredients :
- PESTO
- 1 cup walnuts, toasted
- 1/2 cup parmesan
- 1/4 cup olive oil
- 1 clove garlic
- juice of 1 lemon
- to taste salt and pepper
- GNOCCHI
- 1 tbsp butter
- 16 oz mushrooms sliced
- 24 oz gnocchi
- 3-4 cups arugula
Method :
- Pulse walnuts, parmesan, olive oil, garlic, lemon juice, salt and pepper until paste forms
- Cook gnocchi
- Heat butter and saute mushrooms until they are browned
- Add gnocchi to mushrooms. Stir in half the walnut mixture ans brown til gnocchi is golden brown
- Add some pasta water to rest of pesto, and add to gnocchi. Top with arugula
