Recipe Mushroom gnocchi with arugula and walnut pesto

Ingredients :

  • PESTO
  • 1 cup walnuts, toasted
  • 1/2 cup parmesan
  • 1/4 cup olive oil
  • 1 clove garlic
  • juice of 1 lemon
  • to taste salt and pepper
  • GNOCCHI
  • 1 tbsp butter
  • 16 oz mushrooms sliced
  • 24 oz gnocchi
  • 3-4 cups arugula

Method :
  1. Pulse walnuts, parmesan, olive oil, garlic, lemon juice, salt and pepper until paste forms
  2. Cook gnocchi
  3. Heat butter and saute mushrooms until they are browned
  4. Add gnocchi to mushrooms. Stir in half the walnut mixture ans brown til gnocchi is golden brown
  5. Add some pasta water to rest of pesto, and add to gnocchi. Top with arugula
