Ingredients :
- Main Ingredients
- 1 can kidney beans (15 oz )
- 1 can black beans (15 oz)
- 1 cup frozen shelled edamame (thawed)
- 1 1/2 cup frozen sweet corn (thawed)
- 1/2 red onion, finely chopped
- 4 green onions, sliced
- 1 small sweet red bell pepper, finely chopped
- 1/4 cup fresh cilantro, loosely packed
- Dressing
- 1/2 cup olive oil
- 2 clove garlic, minced
- 1/4 cup red wine vinegar
- 1 1/2 packets Splenda (or about 1tbsp white sugar)
- salt and pepper
- 1 tsp chili powder
- 1 tsp ground cumin
Method :
- Mix together the 8 main ingredients in a large bowl.
- In a small bowl, whisk together the dressing ingredients.
- Add dressing to bean and edamame salad and stir to mix well.
