Ingredients :
- 60 ml olive oil
- 1 small chipotle in Adobe, seeds removed and chopped
- 2 tbsp white vinegar
- 2 tbsp fresh lime juice
- 2 tsp lime zest
- 2 tsp honey / agave nectar
- 2 cloves garlic
- 1 tsp fish seasoning
- 1 tsp hot sauce
- 1/2 tsp ground cumin
- 1/2 tsp chilli flakes
- 1/2 tsp black pepper
- 4 salmon fillets, total weight 1lb
Method :
- Put all of the ingredients except for the salmon itself in a blender or use a pestle & mortar. Blend / grind until it forms a paste
- Put the salmon fillets in a dish. Add the sauce to the salmon and turn to coat. Cover and let marinade in the fridge for at least 1 hour but best if left overnight
- Preheat the oven to gas 6 / 200C / 400F. Put the salmon on lined baking sheet. Bake for 12 - 15 minutes until cooked through
- Can be served hot or cold
