
Ingredients :
- 2 1/2 lbs Chicken Breasts
- 1 large Potato
- 1 Celeriac
- 1 large Onion
- 1 Large Carrot
- 1 bunch Coriander + Parsley + Dill
- 200 grams Tomato Paste
- 1/2 tbsp Curry Powder
- to taste Salt and pepper
- Lemon for flavouring
Method :
- Cut the chicken breasts into small chunks (not too small) and add into a pan with a little oil at the bottom.
- Cook the chicken for about 15 mins on medium heat. Add in any seasonings of your choice at this point.
- Note***** don"t worry if the potatoes and the celeriac aren"t quite cooked yet, same thing with the chicken because it"s going into the oven any way to cook further.
- In a large sauce pan, add in 3 tbsp of vegetable oil and add the tomato paste. Mix very well and add in the water
- Leave to simmer for 10 mins
- Pre heat your oven to 200 Degrees C
- Combine everything together into a circular casserole dish including the herbs, carrots and seasonings.
- Cover with foil. Place into the oven for about 30 mins or until you feel that the chicken and vegetables are cooked through.
- Serve with rice or simply just serve it on its own.
