Ingredients :
- 1 lb radishes, trimmed and diced
- 1/2 c celery, diced
- 1/2 c red onion, diced
- 1/3 c mayo
- 2 hard-boiled eggs
- salt, optional
Method :
- Boil radishes until tender. Drain and rinse with cold water. Transfer to medium bowl.
- Add celery and onion. Stir in mayo and mix until evenly coated.
- Peel and chop eggs. Gently fold into mixture. Salt to taste. Refrigerate several hours before serving.
