
Ingredients :
- To prepare cauliflower
- 1 whole cauliflower, cut up into small pieces most of stem removed
- olive oil for brushing pan and drizzling
- to taste salt and pepper
- For Cauiflower Cheese "bread" sqares
- 1 tablespoon sour cream
- 1/2 teaspoon granulated garlic
- 1/4 teaspoon italian seasoning
- 1 green onion, thinly sliced
- 1/4 cup frsh grated romano cheese
- 1/2 cup shredded sharp cheddar cheese
- 2 eggs, lightly beaten
- 1 teaspoon fresh lemon juice
- Ranch dip and mustard sauce for dipping
Method :
- Preheat oven to 450. Line a baking sheet with foil. Brush the foil with a layer of olive oil
- Place cauliflower pieces in food processor in batches, don"t overfill or it will not chop it finley
- Chop to a fine rice like texture
- Spread cauliflower on prepared pan, season with salt and pepper and drizzle very lightly with olive oil. Roast until golden about 20 minutes, stirring for even cooking
- Add cooked cauliflower to a bowl and add remaining ingredients, mix
- Have oven at 425. Line a baking sheet with foil. Spray foil well with non stick spray
- Spread cauliflower nixture about 1/4 inch thick and roast until firm and lightly browned. About 15 minutes, watch as they burn quickluy
- Cut into sqares and serve w ith Ranch dip and Creamy mustard sauce for dipping
