Ingredients :
- 1 Salmon fillet
- 1 courgette
- Handful mushrooms
- Handful cherry tomatoes
- 1 spoonful creme fraiche
- Parmesan
- 1 lemon
- Black pepper
Method :
- Coat salmon with black pepper and lemon zest. Cook in oven for approx 20 mins. Half cherry tomatoes and cook in the oven until they begin to soften (about 10 minutes.) Spiralize courgette using a spiralizer.
- Fry mushrooms and courgetti in lemon juice. Add lemon zest and black pepper. Stir occasionally.
- Add the tomatoes to the mushrooms and courgetti. Stir in a tablespoon of creme fraiche once the mushrooms and courgetti are cooked. Place cooked salmon fillet on top and sprinkle with Parmesan.
