Ingredients :
- 2 c flaked cooked salmon (if using canned salmon, drain off the liquid)
- 3/4 c seeded, finely diced cucumber (unpeeled; English cucumbers are a good choice)
- 1 tbsp chopped fresh chives
- 2 tbsp mayonnaise
- 1 tsp fresh lemon juice
- to taste Salt and pepper
- 6 large Boston lettuce (or other "butter" lettuce) leaves
Method :
- Place the salmon, cucumber and chives in a medium-size bowl, whisk together the mayonnaise, lemon juice, and salt and pepper. Pour the dressing over the salmon mixture and toss gently.
- Arrange the lettuce leaves on a flat surface and a place equal portions of the salmon salad on each one. Wrap and fold the lettuce securely around the filling and place (with the outside edge of the leaf facing down) on two plates to serve.
