Ingredients :
- 12 oz gnocchi
- 1/4 lb bacon
- 8 oz mushrooms
- 1 shallot sliced
- 3 cloves garlic minced
- 1/4 cup chicken broth
Method :
- Bring pot of water to boil and add gnocchi
- Heat skillet with oil over medium heat add bacon and saute til slight crispy. Remove from skillet
- Add mushroom and shallots to pan. Cook til mushrooms are golden brown
- Add garlic to pan, and saute for 1 min
- Add baby spinach then saute til it is slightly wilted
- Add gnocchi to pan and stir to combine
- Add broth, season with salt and pepper. Top with bacon and serve
