Recipe Cream of Mushroom Soup

Ingredients :

  • 250 g mushrooms (shiitake/button)
  • 1/2 medium sized onion
  • 2-3 cloves garlic
  • 1 1/2-2 tablespoons butter
  • 200-300 ml single cream
  • 150 ml milk
  • Vegetable stock (optional to adjust consistency)
  • to taste Salt
  • to taste Pepper

Method :
  1. Cut the mushrooms into thin slices.
  2. Mince the onions and garlic.
  3. Heat a pan with the butter.
  4. Once the butter has melted, add in the mushrooms and fry for about 10 minutes on medium heat.
  5. Once the mushrooms reduce in size and feel soft, add in the cream and milk.
  6. If the consistency is too thick, add in more milk or vegetable broth to adjust.
  7. Let it cook for a few minutes. Add in salt and pepper to taste.
  8. Herbs like parsley may be added.
