Ingredients :
- 4 Cornish hens
- 2 grape fruits
- 2 oranges
- 3 lemons
- 1/2 cup Maples syrup
- 2 tbsp smoked paprika
- 1 tsp salt
- 1 tbsp garlic powder
- 1 tsp ground black pepper
- 1/4 cup olive oil
- 1 cup apple wood chips
Method :
- Add all citrus(cut in half) and molasses to large bucket or pot for brine. Brine over night or for at least 8 hours. Feel with water until hens are fully submerged
- Pull hens from brine pat dry and brush with olive oil
- Combine dry season and season both sides of hens.
- Add hens to a grill. Keep temp around 225 for 2 and half hours. Add Applewood or fruit wood of choice for best smoke flavor.
