Ingredients :
- 10 eggs
- 1/4 cup milk
- 5 slices cooked thick cut bacon, crumbled
- 1/4 cup shredded pepperjack cheese
- 1/4 cup shredded cheddar cheese
- 1 tbsp McCormick chipotle & roasted garlic seasoning
- salsa, sour cream and chives for serving
Method :
- Preheat oven to 350 degrees.
- Place eggs, milk, bacon and seasoning in a blender. Blend for 5 seconds
- Mix the cheese into the egg mixture
- Spoon into two 6-muffin tins or one 12-muffin tin, filling about 3/4 full
- Place muffin tin/s into the oven and cook for about 15 minutes
- Remove from oven, top with a little shredded cheese and let set 3-5 minutes.
- Remove from pan and place two omelet rounds on a bed of salsa. Top with a dollop of sour cream and a sprinkling of chives or parsley
- Work great as a stand alone or serve with toast, potatoes, fruit, or whatever you like
