Ingredients :
- 1 5 lb chicken whole
- 2 tbsp butter
- 1 kosar salt to taste i used a tlbspoon
- 1 black pepper enough to decorate
- 1 half cup red wine
- 1 cup of chicken stock
- 2 clove garlic
- 1 bunch of thyme
- 1 table spoon Italian seasoning
- 1 table spoon corn starch water soulition
Method :
- Cut chicken up the back work legs until playable. Butterfly on rack
- Put chicken on a rack i used a rotisserie oven rack over my roasting pan
- Salt and pepper chicken let stand one hour add wine chicken stock garlic and thyme to roasting pan under chicken
- Turn up oven to broil
- Place chicken under broiler about three inches from element for ten minutes turning often for even brown
- Turn oven down to 375 baste with butter
- Let roast for an hour and quarter butter baste again half way thru
- Turn chicken over
- Raise heat to broil broil for five minutes turning at 2 30
- Remove chicken tent with foil for 12 minutes
- Strain broth in pan with sive into sauce pan add corn starch mixture and italian seasoning
- Skim with bread to remove excess chicken fat
- Bring to a boil whisking often turn heat to low simmer for five minutes
- Serve use sauce for dipping the chicken gravy for mashed potatoes or my favorite over egg noodles
