Ingredients :
- 2 cup Grated carrots
- 1 1/2 cup Coconut oil
- 4 Eggs beaten
- 2 cup Sugar
- 2 cup Flour (Cup for cup Paleo)
- 2 tsp Baking soda
- 1 1/2 tsp Salt
- 5 tsp Cinnamon
- 2 1/2 tsp Baking powder
- 1 Raisins
- 1/2 cup Chopped walnuts or pecans
Method :
- Preheat oven to 350°.
- Mix all ingredients.
- Reese and flour a Bundt pan.
- Bake one hour to one hour and 15 minutes.
- Let sit for 20 minutes before removing from pan.
