Recipe Kale and Ricotta Macaroni

Resep Kale and Ricotta Macaroni

Ingredients :

  • Macaroni Pasta (enough for 1-2 people)
  • 2 cloves garlic chopped
  • 1 leek sliced
  • Handful curly kale
  • 6 cherry or small vine tomatoes chopped
  • 1/2 tub ricotta cheese
  • 1 sprinkle pine nuts
  • 1 small bunch basil, torn
  • Grated Parmesan to serve
  • Salt and pepper

Method :
  1. Cook pasta to instructions
  2. Fry garlic and leek in some olive oil for one minute, add the kale and fry for a further two minutes. Add the tomatoes, fry for a further two minutes. Stir in the ricotta and cook for a further two minutes.
  3. Stir the sauce into the drained pasta. Serve sprinkled with some pine nuts, Parmesan, basil and season with salt and pepper.
