Ingredients :
- 1 packet chicken fillets
- 2 eggs
- 2 limes
- 1 small glass olive oil
- 1 bowl breadcrumbs (I used half a stale baguette)
- Salt and pepper
Method :
- Zap your stale bread in the food processor and beat the eggs
- Grate the zest of 2 limes and add to the beaten eggs
- Heat the oil - moderate heat. If the heat is too high, the second batch of fillets will burn
- Soak the fillets in the egg (having added pepper and salt)
- Coat in the bread crumbs (use left hand to transfer eggy fillets to the crumb dish, and right hand to coat)
- Fry in the hot oil
- When the side up meat starts to turn white around the edges turn over
- Line a surface with kitchen towel and when the fillets are ready, take out of the pan and put on the surface to drain off any surplus oil
- Enjoy with a squeeze of lemon juice and a green salad.
