Recipe Parmesan Honey Roast Pork Tenderloin

Ingredients :

  • 1 (2 lb) pork loin roast, boneless
  • 2 tbsp olive oil
  • Salt and pepper
  • *2 tbsp honey
  • 2 tbsp soy sauce
  • 2 tbsp dried rosemary
  • 2 tbsp finely minced garlic
  • 1/3 c grated Parmesan cheese

Method :
  1. Preheat oven to 450 degrees F.
  2. Place the roast in a baking pan. Season evenly on all sides with salt and pepper.
  3. In a bowl, whisk together the olive oil, honey and soy sauce. In your palms, crush and rub the rosemary over the bowl; add the garlic and Parmesan cheese and mix well.
  4. Using a spoon and your fingers, coat the roast evenly with the mixture.
  5. Bake for 30-40 minutes, depending on your preference ford oneness (or until meat thermometer reads 160 degrees F). Let the roast sit under a loose foil tend for 5 minutes before slicing.
  6. 703 calories per serving, GL=2, Glycals=12 on a bed of greens.
