Ingredients :
- 1 (2 lb) pork loin roast, boneless
- 2 tbsp olive oil
- Salt and pepper
- *2 tbsp honey
- 2 tbsp soy sauce
- 2 tbsp dried rosemary
- 2 tbsp finely minced garlic
- 1/3 c grated Parmesan cheese
Method :
- Preheat oven to 450 degrees F.
- Place the roast in a baking pan. Season evenly on all sides with salt and pepper.
- In a bowl, whisk together the olive oil, honey and soy sauce. In your palms, crush and rub the rosemary over the bowl; add the garlic and Parmesan cheese and mix well.
- Using a spoon and your fingers, coat the roast evenly with the mixture.
- Bake for 30-40 minutes, depending on your preference ford oneness (or until meat thermometer reads 160 degrees F). Let the roast sit under a loose foil tend for 5 minutes before slicing.
