Ingredients :
- 2 lbs ground beef
- 1 cup green bellpeppers finely diced
- 1 cup red bellpeppers finely diced
- 2 cups onion finely diced
- Flour Tortillas-medium sized
- Enchilada sauce-whatever kind
- Taco/enchilada seasoning
Method :
- Brown ground beef in pan and drain excess fat
- Put beef back into pan on medium heat, cover for 5 minutes to create steam
- Uncover, add taco/enchilada seasoning, 1 pinch of salt, 2 pinches of black pepper. Stir.
- Add in onions and peppers, stir in medium/high heat for 5 minutes, then cover and leave on low heat during prep
- PREP your pan! Spray non-stick all around inside of pan.
- Add a cup of sauce, roll around pan to fully cover bottom.
- Add your tortillas, any way that you want to. I stack mine horizontally like tacos
- Take your pan off the heat, add cheese to the tortillas, and then beef mix. Save some for topping
- Add more enchilada sauce to the tortillas, then close them up-its okay if they keep folding open
- Add more sauce, then beef, and finally add a layer of cheese. (option: add chopped cilantro leaves, spread across sparlingly)
- Place in oven at 375 °F for 20 minutes
