Ingredients :
- 1 can black beans
- 1 can black eyed peas
- 1 can corn
- 1 green pepper
- 1 red pepper
- 1-2 jalopeno peppers
- 1 bunch cilantro
- 1 onion
- 1/2 cup olive oil
- 1/2 cup rice vinegar
- 1/3 cup sugar
- 1 tsp garlic powder
Method :
- Combine beans, peas and corn in big bowl. Chop peppers, onion and cilantro and add to bowl.
- Mix oil, rice vinegar and sugar in pot and bring to boil so sugar dissolves.
- Add garlic powder. Once sugar dissolved let cool then combine with big bowl of ingredients.
- Chill. Serve with tortilla chips.
