Ingredients :
- 3 very ripe bananas
- 1/4 cup honey or maple
- 1/4 cup coconut oil
- 1/2 cup water
- 2 tbsp. ground flaxseed + 6 tbsp. water (or 2 eggs + 2 egg yolks if you're not vegan)
- 1 tsp. vanilla essence
- 1 tsp. coffee grounds
- 1 pinch salt
- 3/4 cup cocoa
- 2/3 cup coconut flour
- 1 cup (or more) dark chocolate chips
Method :
- Preheat oven to 190°C.
- Place a baking sheet into a tin pan.
- In the large mixing bowl, mash the bananas. Add in the wet ingredients (honey, coconut oil, water, eggs (or flaxseed mix) & vanilla) & mix through.
- Then add the coffee, salt, coconut flour & cocoa. Mix through using the fork until it’s all combined.
- Add the chocolate chips & fold through.
- Pour the mixture into the prepared tin & pop into the oven for 25 minutes.
- They will seem rather uncooked but they will harden as they cool.
- Storage: In airtight container for up to 5 days
