
Ingredients :
- 1/2 medium onion
- 2 tablespoons Mayo
- 2 tablespoons Ketchup
- 1 tablespoon yellow mustard
- 2 teaspoons Lea and Perrins
- 1 teaspoon Tabasco
- juice of half a lemon
- to taste salt and pepper
- 2 small gherkins
- 1-2 tablespoons pickling liquor (from gherkins)
Method :
- Finely dice onion, fry in vegetable oil with salt on a low heat until caramelised, 20 minutes approximately
- Using a microplane grater, grate up the gherkins and add to a mixing bowl
- Add the rest of the ingredients to the bowl, whisk together and add the cooked onions to the mix still warm and stir in well. Add pepper to taste
