Ingredients :
- 1 cup diced pineapple
- 1 cup red tomato, seeded and diced (divided)
- 1/2 cup red onion, diced
- 2 limes, juiced
- 3 cloves garlic, minced
- 1 tablespoon ginger, chopped
- 3 tablespoons chopped cilantro
- to taste Jalapeño, diced.
- 1 teaspoon sea salt
- 1/2 teaspoon fresh ground pepper
Method :
- Put pineapple and 1/2 cup tomato in food processor, pulse until finely chopped.
- Combine everything in a bowl and chill at least 1 hour to allow flavors to meld.
