Ingredients :
- 280 grams plain / gluten-free flour plus an extra 120g (scant cup)
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 tsp xanthan gum if using a gluten-free flour blend
- 3 tbsp oil
- 200 ml warmed milk, I use light coconut milk
Method :
- Measure the first amount of flour into a bowl and mix through the baking powder and salt, xanthan gum if using too
- Make a well in the middle and pour in the oil and milk
- Mix together into a sticky batter
- Start to add the remaining flour, mixing with your hands until a soft dough is formed, no longer sticky. You may need more or less flour
- Divide into 6 equal pieces and roll into balls. Let rest for 15 minutes
- Roll or pat out on a floured surface into circles, thickness depends on what bread you"re making. A thin circle makes tortillas, a thicker circle is more like a naan or pitta bread
- Dry fry in a frying pan for 1 - 2 minutes or so over a medium heat until coloured on one side, then flip and fry on the other
- Try using additional flavourings such as shredded coconut and raisins to make a peshwari type naan bread or chopped coriander and garlic, chives or parsley. Even sugar and cinnamon for a sweet bread
- Can even be made into a dessert bread with some additional ingredients
