Ingredients :
- 600 ml cider vinegar
- 300 grams demerara sugar
- 1 cinnamon stick
- 3 fresh ginger slices
- 1/2 tsp black peppercorn
- 3 lemon slices
- dash lemon juice
- 6 pears, peeled cored and quartered
Method :
- Dissolve sugar in vinegar and simmer with spices stirring slowly until sugar dissolves.
- Fill a bowl with cold water and add lemon juice and slices. Add the pears as you peel and quarter them.
- Drain pears and add them to the vinegar and spice mix. Boil for about 15 minutes.
- Fill a sterilized jar with pears and return vinegar for further 5 minutes boiling.
- Top up pears with vinegar mixture.
