
Ingredients :
- 2 lb pork tenderloin* – trimmed of fat and silver-skin
- 4 tbsp mustard
- 4 Tbsp yogurt
- 3 Tbsp olive oil
- 2 cloves garlic – minced
- 2 Tbsp fresh minced rosemary
- to taste Salt and pepper
Method :
- Heat grill to high, clean the grates before they get too hot and oil the grates
- Combine all ingredients, except for tenderloins, in bowl
- Remove visible fat and silver-skin from tenderloins
- Rub mustard/yogurt mixture all over pork
- Grill pork uncovered, turning once, until the meat feels springy, not mushy, when squeezed (150° to 155°F)
- Remove from grill and let rest for at least five minutes before serving. Approximate preparation time 35 minutes.
