Ingredients :
- 1 cup quinoa
- 2 cups water
- 1 ⁄2 c chopped fresh mint
- 1 ⁄2 cup chopped fresh parsley
- 1 cup diced cucumber, peeled
- 1 cup halved cherry tomatoes
- 2 tablespoons Olive oil (Extra Virgin)
- 2 garlic cloves, minced
- 1 ⁄4 c lemon juice
- to taste Sea salt & black pepper,
Method :
- Cook quinoa according to package directions. Once cooked, transfer to a large bowl to cool.
- Combine with all remaining ingredients and stir to combine. Season with sea salt & pepper to taste.
