Recipe Quinoa Tabbouleh

Ingredients :

  • 1 cup quinoa
  • 2 cups water
  • 1 ⁄2 c chopped fresh mint
  • 1 ⁄2 cup chopped fresh parsley
  • 1 cup diced cucumber, peeled
  • 1 cup halved cherry tomatoes
  • 2 tablespoons Olive oil (Extra Virgin)
  • 2 garlic cloves, minced
  • 1 ⁄4 c lemon juice
  • to taste Sea salt & black pepper,

Method :
  1. Cook quinoa according to package directions. Once cooked, transfer to a large bowl to cool.
  2. Combine with all remaining ingredients and stir to combine. Season with sea salt & pepper to taste.
