Ingredients :
- 15 corn tortillas
- 2 1/2 cup blended beans
- 1/2 pound queso fresco
- 1 pound sour cream
- 3 pounds cooked shredded chicken breast
- 1 bag shredded lettuce
- Homemade salsa
Method :
- Fry tortillas in the frying pan with a little oil, use tongs to flip tortillas over. Hold it there for about 5-15 seconds, until it has softened but isn"t falling apart. Remove onto a plate, fill tortillas with shredded chicken, and loosely roll up. Repeat for all of the tortillas
- Use fresh boiled beans and place them in the blender and blend until you get a nice creamy sauce.
- Pour some of your creamy bean paste on top of your rolled up tortillas.
- Top with sour cream, cheese, shredded lettuce, and some homemade salsa.
