Ingredients :
- 1 (28 oz.) can whole plum tomatoes
- 1 small onion, diced
- 1/2 each red & green peppers, slice into strips
- 2 garlic cloves, minced
- 1 bay leaf
- to taste salt & pepper
- 1-2 Tbls oregano
- 2 eggs per person
Method :
- In a bowl break up whole tomatoes with your hands, set aside.
- In a saute pan, heat and add 2 tbls of olive oil. Saute onions and peppers, season with salt & pepper. Cook about 5 minutes add tomatoes and bay leaf. Bring to boil, reduce to a simmer abd cook about 1 hour.
