Ingredients :
- 2 cups grated fresh corn kernels (about 12 ears)
- 1 tbsp flour
- 1 tbsp sugar
- 1 tsp salt
- 1/4 tsp pepper
- 1 tbsp reduced -fat margarine
- 1 cup egg substitute
- 1 cup fat-free (skim) evaporated milk
Method :
- grate corn from ears into a large bowl
- add flour, sugar, salt, and pepper to the corn and stir
- heat oven to 325 Degrees
- melt margarine in a separate dish
- in a separate bowl, beat the egg substitute, margarine, and milk for 3 minutes
- add egg mixture to the corn mixture
- stir well
- pour pudding mixture into a nonstick loaf pan
- place loaf pan into a hot water bath inside oven
- bake for 30 minutes or until the pudding is firm to the touch
