Ingredients :
- 2 stick Butter(softened)
- 10 each Red Potatoes(unpeeled)
- 8 oz Cream Cheese
- 1 cup Heavy whipping Cream
- 5 clove Garlic(minced or chopped finely)
- 1 bunch Green onion
- 1 tbsp Salt
- 1 tbsp Pepper
- 1 tbsp Garlic salt
Method :
- After rinsing potatoes under cold water, cut them into quarters.
- Bring a large pot of water to a simmer, then add quartered potatoes and a table spoon of minced garlic or 3 cloves whole, garlic salt, and pepper. Bring to a boil for 20-25 minutes or until fork can enter potatoes and they feel softened.
- Drain potatoes in a colander then return to pot on low heat. Mash potatoes to your liking. I prefer them a little lumpier.
- Add cream cheese, heavy whipping cream, salt, pepper, chopped green onion, and butter, combine.
- Grab half a stick of butter and spread over a 3-4 quart pan. Spread the mashed potatoes in the pan and add remaining butter to your liking. Bake for 20-30 minutes in an oven at 350°F.
- Once butter has melted through garnish with remaining green onion. Enjoy!
