Ingredients :
- 2 Chorizo Sausage sliced
- 1 large Chicken Breast, cut into thick strips
- 3 Tbsp olive oil
- 1 Medium Onion
- 1/4 tsp dried Ginger
- 1/2 tsp Szechuan peppercorns
- 1/2 tsp dried Paprika
- 1 chicken stock cube
- 1 pinch cayenne pepper powder
- 1 tsp Mixed Peppercorns crushed
- 1/2 cup boiling water to mix the stock cube in
- 1 jar Sundried Tomato in olive oil (use 2 tbsp of tomatoes about 4/5 pieces tomato)
- 1/2 one colour sweet pepper, and another half of a different colour
- 1 tsp Sour Cream
Method :
- Heat up oil in a wok or deep frying pan
- Add the onions and fry for a minute
- Add the ginger and stir in
- Add the chicken and mix in fry until chicken is near cooked
- Add the chorizo
- Add all the peppers and paprika and stir well
- Add the chicken stock and stir bring to the boil
- Add the sundried tomatoes and stir in
- Add the sweet peppers
- And add the sour cream and mix and serve hot
- Serve with a potato salad with yogurt or on a bed of noodles
