Ingredients :
- 2 Smoked Sausage links sliced
- 2 large russet potatoes (cut into cubes)
- 1 small bell pepper
- 1/2 onion, chopped (or small onion)
- 1 clove garlic
- 1/4 cup chicken broth
- 2 tbsp olive oil
- 1 salt and pepper
- 1/4 tsp dried parsley
- 2 dash paprika
Method :
- Prepare vegetables and sausage.
- Add oil in large skillet, add sausage turning often until edges are brown. Remove meat from skillet.
- Add potatoes to skillet cook on med. high until tender and edges begin to brown.
- Once potatoes are tender add garlic, onions, and bell pepper cook for about 5 minutes until translucent then add chicken broth cover and cook for another 5-6 minutes then add all season and sausage cook for 5 minutes and your done! Enjoy😀
- SIDE NOTE: On the side I sauteed mushrooms and spinach because I"m the only one in the house that eats them and then I added them to my plate and mix it in with the potatoes and sausage. I loved it!!!!
