Ingredients :
- 12 corn tortillas
- 1/2 C green chile enchilada sauce
- 1 C black beans
- 1 C Rotel mild diced tomatoes with green chillies
- 1 C Mexican blend shredded cheese
- 1/2 lb. ground turkey
- 1 small green bell pepper (diced)
- 4 cloves garlic chopped
- Green onion to top
- 1 tbsp. chili powder
- 1 tbsp. cumin
- 1 tbsp. onion powder
- 1 tbsp. oregano
- Olive oil
Method :
- Add black beans and diced tomatoes (drain some of the liquid from cans first). Simmer about 10 minutes to let flavors mix and thicken a bit.
- Coat a baking dish with 1 tbsp. olive oil. Poor a little bit of green chile enchilada sauce in the bottom of dish to cover. Lay tortillas evenly (I used 6).
- Spoon some of the meat and bean mixture on top of the tortillas to cover one layer. Lay 6 more tortillas on top and poor a little green sauce on top of tortillas. Layer again with meat mixture.
- Add cheese and green onions. Cover with foil. Bake at 350 for about 20 minutes.
