
Ingredients :
- 4 chicken quarters
- 2 tbsp olive oil
- 2 tbsp flour
- 1 1/4 tsp salt
- 1 tsp oregano
- 1/2 tsp ground pepper
- 12 oz fresh mushrooms, sliced
- 1 large pepper, chopped
- 3/4 cup chopped onions
- 14 1/2 oz canned tomatoes
- 1/2 cup white wine
- 1 tbsp chipped fresh flat-leaf parsley
Method :
- Remove skin from chicken and trim visible fat.
- Heat oil in a large pan in the oven for 2 minutes.
- Combine flour, 1 tsp salt, oregano and pepper in a large Ziploc bag. Add chicken pieces, tossing to coat well with the mixture.
- Arrange chicken on hot oil in the pan and bake for 20 minutes.
- Stir mushrooms, pepper and onions into the pan with chicken. Bake for 15 more minutes, stirring once.
- Add tomatoes with their liquid, wine and remaining 1/4 tsp salt, breaking up tomatoes with a fork.
- Broil for 10 minutes.
- Sprinkle with chopped parsley.
