Ingredients :
- 2 cups grits (regular, not instant)
- 3 eggs
- 1/2 chopped onion
- 2 tbsp butter
- 1 cup (cooked) chopped bacon, breakfast sausage or smoked sausage
- 1 tsp garlic salt
Method :
- When the grits are almost done (still retaining some firmness when tasted), remove from heat.
- Add grits to whisked eggs and stir gently. Add chopped onion, meats, and shredded cheese. Continue took stir gently until fully mixed.
- Coat muffin tin with non stick spray to keep the muffins from sticking.
- Bake for approximately 15- 20 minutes or until firm.
- Garnish with shredded cheese of choice.
