Recipe Kale chicken and sundried tomato bowl

Ingredients :

  • MARINADE:
  • 1/3 cup olive oil
  • 3 tbsp lemon juice
  • 1/2 tsp salt
  • BOWL:
  • 2 cups uncooked quinoa
  • 1 bunch kale
  • 1 avocado
  • 1 lb boneless chicken breasts
  • SAUCE:
  • 16 oz sundried tomatoes in oil
  • 2 cloves garlic
  • to taste salt
  • juice of one lemon
  • 1/2 cup olive oil
  • 1/2 cup almonds

Method :
  1. Whisk together the marinade and marinate kale over night and chicken for 30 min to 2 hours
  2. Cook the chicken and quinoa
  3. Pulse sauce ingredients together in food processor
  4. Toss quinoa and sauce together top with chicken avocado and kale
