Ingredients :
- MARINADE:
- 1/3 cup olive oil
- 3 tbsp lemon juice
- 1/2 tsp salt
- BOWL:
- 2 cups uncooked quinoa
- 1 bunch kale
- 1 avocado
- 1 lb boneless chicken breasts
- SAUCE:
- 16 oz sundried tomatoes in oil
- 2 cloves garlic
- to taste salt
- juice of one lemon
- 1/2 cup olive oil
- 1/2 cup almonds
Method :
- Whisk together the marinade and marinate kale over night and chicken for 30 min to 2 hours
- Cook the chicken and quinoa
- Pulse sauce ingredients together in food processor
- Toss quinoa and sauce together top with chicken avocado and kale
