Ingredients :
- 2 Medium Bananas
- 130 g Peanut Butter
- 70 g Light Brown Sugar
- 1/2 tsp Vanilla Extract
- 165 g Plain Flour
- 1 tbsp Cinnamon
- 1 tsp Baking Powder
- 40 g Chocolate Chips/Raisins (Optional)
Method :
- In a small bowl start mashing the bananas using a fork or a potato masher.
- In a medium bowl stir the banana with the peanut butter and mix very well until blended.
- Add in the sugar and vanilla extract and mix.
- In a separate bowl mix the dry ingredients: flour, baking powder and cinnamon
- Sift the dry ingredients into the wet ingredients and mix very well until it forms a very soft dough.
- Leave to chill in the fridge for about 1 hour or 15-20 mins in the freezer (if you are in a hurry)
- Preheat the oven to 180 C degrees
- Prepare a baking tray by either greasing it with butter or lining it with baking paper.
- Place the cookies into the tray and bake for about 10-12 mins
- When done, leave in the tray to cool completely and ready to eat.
