Ingredients :
- 1 1/4 lbs potatoes
- 3 tbsp olive oil
- Kosher salt
- Black pepper
- 2 cloves garlic, minced
- 2 tbsp parsley, minced
- 1 tsp minced thyme
- 1/2 tsp rosemary minced
Method :
- Preheat oven to 425°F
- Cut slits through each potato stopping before the bottom
- Place of baking dish and brush with some of the olive oil and season with salt and pepper
- Bake 20 min
- Add garlic and herbs to olive oil and brush over potatoes getting as much as possible in the slices
- Bake another 10 min
