Ingredients :
- 4 red bell peppers
- 1/3 cup crumbled feta cheese
- 1/3 cup chopped kalamata olives
- 2 tbsp extra virgin olive oil
- 1 tbsp olive brine from jar of olives
- 1 1/2 tsp dried oregano
- 1 fresh basil leaves to taste
Method :
- Char red peppers until blackened.
- Put in a bowl, cover, and let steam until cool, at least 15 minutes.
- Discard the skins and seeds and cut into 1 inch strips.
- Toss with feta cheese, olives, extra virgin olive oil, olive brine, and oregano.
- Scatter with basil leaves.
- *In order to char peppers, you can use a hot grill, gas burner, under the broiler method, or jarred ones that are already roasted.*
