Ingredients :
- 4 eggs, separated
- 1/4 teaspoon salt
- Dash pepper
- 225 ml cottage cheese
- 1 tablespoon olive oil
- 1 cup spinach
- 1/2 cup mushrooms
Method :
- Preheat oven to 180 C
- Beat egg whites until frothy, add salt and beat until stiff
- Beat yolks until thick, add pepper and cottage cheese and beat until well blended
- Fold egg whites into yolks, add mushrooms and spinach and cook for 3 minutes on pan until the bottom is lightly browned
- Cook in oven for 15 minutes
