Ingredients :
- 1/2 kg pork cut into cubes
- 4 tbsp olive oil
- 1 onion
- 1 kg tomatoes
- 1 tsp salt
- 1 bay leaf
- 2 cloves garlic
Method :
- Cut pork into cubes, getting as much as the fat off the pork as possible. Fry the pork cubes until browned.
- Chop the onion and crush the garlic then add to the pork in the frying pan
- Peel and chop the tomatoes and add to the frying pan then season with salt and add the bay-leaf
- Cook over a low heat until the pork is tender and the sauce has thickened (this usually takes approx. 25 - 30 mins).
