Recipe Roasted Acorn Squash

Ingredients :

  • 1 Acorn squash - 1 per two servings
  • Olive oil
  • 1 tsp Pumpkin pie spice - per each squash

Method :
  1. Preheat oven to 350°F
  2. Slice stems off squash. Cut in half horizontally (stem on each side). Scoop out seeds and membranes and discard
  3. Brush insides with olive oil and sprinkle each side with 1/2 teaspoon pumpkin pie spice and salt
  4. Place squash on baking sheet, stems down. Bake for 50 minutes or until tender
  5. Works as a bowl for your favorite soup, salad, or gumbo.
