Ingredients :
- 1 Acorn squash - 1 per two servings
- Olive oil
- 1 tsp Pumpkin pie spice - per each squash
Method :
- Preheat oven to 350°F
- Slice stems off squash. Cut in half horizontally (stem on each side). Scoop out seeds and membranes and discard
- Brush insides with olive oil and sprinkle each side with 1/2 teaspoon pumpkin pie spice and salt
- Place squash on baking sheet, stems down. Bake for 50 minutes or until tender
- Works as a bowl for your favorite soup, salad, or gumbo.
