Ingredients :
- 1 tbsp oil
- 1 onion, chopped
- 1 tbsp mustard seeds
- 1 green chilli, finely chopped
- 2 tsp finely chopped garlic
- 1 tsp freshly grated ginger
- 400 g canned, chopped tomatoes
- 25 g desiccated (finely shredded) coconut
- 1 tsp mild curry powder
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 2 tbsp coconut cream
- 4 medium sized, pre-boiled potatoes, chopped
- 2 tbsp freshly chopped coriander / cilantro
- to taste salt
- to taste sugar
Method :
- Heat the oil in a pan over a medium low heat and cook the onion, mustard seeds, chopped chilli, garlic and ginger for 5 minutes
- Stir in half of the chopped tomatoes, desiccated coconut, curry powder, turmeric and cumin
- Stir in the cream and chopped potatoes
- Add the rest of the can of tomatoes and let simmer for 10 minutes. You can add a bit of hot water if you feel the sauce is too thick. Stir through the chopped coriander, add salt and sugar to taste and serve hot with rice
