Ingredients :
- 1 unbaked 9 inch in shell (store bought or make your own)
- 2 tbsp butter
- 10 oz frozen spinach or 1 pound of fresh
- 4 large green onions, chopped
- 3 large eggs
- 3/4 cup milk
- 1/2 tsp basil
- 1/2 tsp celery salt
- 1 tbsp bread crumbs
- 1 tbsp or more grated Parmesan cheese
- 4 to 6 cherry tomatoes, circle cut and patted dry
- 1 1/2 cup shredded Swiss cheese (pepper jack cheese can also be used if you prefer a spicier quiche)
- 1 garlic clove, minced
Method :
- Preheat oven to 425°F.
- Cook the spinach and drain well.
- Melt the butter in a skillet over medium heat.
- Add the onion and garlic and cook for 2 minutes.
- Add the spinach.
- Cook and stir until any excess moisture is gone.
- Place in a large bowl.
- Add the cheese, eggs, milk, basil, and celery salt.
- Mix well.
- Spoon into prepared pie shell.
- Arrange the cherry tomatoes around the edges of the filling.
- Bake for 15 minutes.
- Decrease the oven temperature to 350°F and bake for 10 minutes.
- Mix bread crumbs with Parmesan cheese and sprinkle over the top of the quiche.
- Bake for a final 10 minutes.
- Let cool for a bit before slicing.
