Ingredients :
- 3 good sized Fresh or frozen boneless skinless Chicken breasts cubed
- 1 can drained Pineapple Chunks
- 3 tsps minced garlic
- 1 red bell pepper in chunks
- 5 tbsp sweet red chili sauce
- 1-3 tsp red pepper flakes (how spicy you like)
- 1/2 tsp salt
- 1/3 cup white sugar
- 1 1/4 cup water
- 2 tbsp corn starch
- 2 cups cooked white or brown rice
Method :
- First spray your slow cooker with non-stick cooking spray. Then rinse chicken and cut into cubes or bite sized chunks and then chop your bell pepper. Next put into the crock pot chicken and red bell pepper. Sprinkle salt and little bit of white sugar on top then add your drained pineapple chunks.
- In a bowl mix 1 cup water, sweet chili sauce, the rest of your sugar and red pepper flakes together. Then pour into your slow cooker. Finally turn on low for about 4-5 hours.
- During the last half hour of cooking, mix 1/4 cup cold water with cornstarch and then put into crock pot to help thicken the sauce. At that time I turn it up to high (if on low) for another 30 or so minutes. Make your white or brown rice or even some fried rice is delicious and there you go!
