
Ingredients :
- 400 g Pork
- 2 Red Onions
- 2 Flat Mushrooms
- 2 tbsp tomato puree
- 1-2 tbsp Paprika
- 2-3 tbsp Cajun
- 200 ml Chicken Stock
- 2 Tbsp Olive Oil
- Pinch Salt and Pepper
- 2 Cloves Garlic
Method :
- Cook up the Pork in the Oven. I used a Pork Fillet. Cover it in foil for around 30 minutes on a preheated oven of around 190c.
- To save time you can also pre-cook your mushrooms.
- Once cooked, leave to cool and then slice in strips.
- Over a heated oil and pan, slice your onions and mushrooms and crush your garlic and brown them off. Once browned throw in your Pork.
- Add the tomato puree and mix together. Put in the Paprika and mix and then Cajun and mix. Add/Reduce to your liking.
- Once all combined, add in your chicken stock. Bring to boil and then let it simmer on a low to med heat for a further 20 minutes.
- Once simmered and the stock has reduced a good amount, add your seasoning. You are ready to serve with Rice.
