Ingredients :
- 4 each Boneless/Skinless Chicken Breasts
- 1 cup BBQ Sauce
- 1 1/2 cup Colby Jack Cheese blend
- 8 slice Bacon
- 2/3 cup Diced Tomatoes
- 1/4 cup Chopped Chives
Method :
- Preheat oven to 375°F, while heating, Pound Chicken Breasts with tenderizer to flatten. (This helps chicken get tender & juicy and hold toppings)
- Bake Chicken for 20 minutes on a baking pan (use foil and non stick spray before placing chicken onto pan)
- Fry Bacon while chicken cooks. (Do not burn)
- Pull chicken from oven, drain juices, cover with BBQ sauce.
- Lay 2 strips bacon in an X pattern on top of BBQ sauce, sprinkle with diced tomatoes, then sprinkle cheese over tomatoes covering the chicken breast.
- Turn oven to broil and allow to heat up. Place Chicken under broiler until cheese melts. Remove from broiler and sprinkle with chives!
