
Ingredients :
- zucchini
- 2 large zucchinis
- dressing
- 2 tbsp fresh lemon juice
- 1 tbsp lemon zest
- 1 salt
- 3 tbsp olive oil, extra virgin
- 1 tsp parsley flakes
- toppings
- 1/3 cup grated parmesan cheese
- 2 tbsp roasted pistachios
Method :
- Wash the zucchinis. take a vegetable peeler, or mandolin and slice long ways into ribbon thin slices.
- Zest and Squeeze the lemon. To that add oil, salt, and parsley flakes. Mix well
- Toast the pistachios. Add the dressing to the zucchini. Add pistachios and grate the cheese over the top.
