
Ingredients :
- 1 tbsp oil
- 2 red onions, thinly sliced
- 1 leek, thinly sliced
- 1350 ml hot vegetable stock
- 3 green apples, peeled, cored and diced
- 1/2 tbsp freshly chopped thyme
- 1/2 tbsp freshly chopped rosemary
- to taste salt and pepper
Method :
- Heat the oil in a large pan over a medium heat
- Add the sliced onion and leek and cook, stirring often until just turning golden
- Pour in the stock, add the apples and herbs and bring to the boil
- Turn down to a simmer and let cook for 10 minutes
- Season to taste and serve
