Ingredients :
- 1 cup Olive oil
- 3 lb Jumbo carrots chopped
- 3 lb Yellow onion chopped
- 2 tbsp Dried basil
- 6 can Plum/chopped Italian style tomatoes
- 3 quart Water
- 1 lb Chicken base
- 3 quart Heavy cream
- 2 tbsp Salt
- 1 tbsp Pepper
Method :
- In large pot heat oil on high for 2 min
- Add onions, carrots, and basil and sauté until onions are translucent and carrots are tender - about 25 min
- Add tomatoes with their juice, water and chicken base. Stir to dissolve chicken base and let simmer for 60 min.
- Turn off heat and blend with a hand mixer until smooth - about 3-4 min on high speed.
- Add cream, salt and pepper and stir in thoroughly.
- Return to heat and let simmer for 6-8 min before serving.
